A hill above the Ionian Sea.

412 olive trees of the rare Dolce di Rossano variety, above Rossano in Calabria — some have borne fruit since the 12th century. We have no more land. We want no more.

We blend nothing in, we buy nothing else. What this one hill yields in a single harvest is bottled — and then it is over.

After a year on the shelf: of nothing.

Most oil is blended from many countries, mixed into anonymity, stored for months. That is why we do it differently — and count every bottle.

Four hours between

In the morning: the harvest

By hand, olive by olive. No machine shakes the trees, nothing lies on the ground — what goes to the mill was carried there.

What hung on the tree in the morning runs from the mill as oil by midday. Four hours — you can taste it. Freshness is the true luxury.

Measured, not claimed.

Ordinary olive oil sits at around 50 mg/kg of polyphenols. Ours at 344 and 697 — confirmed by an accredited laboratory using the COI method.

Every vintage carries its own profile — with all laboratory values. Transparency is not a gesture — it is the proof.

Values as factual product information. Polyphenols are heat-sensitive — best enjoyed raw.
