Kitchen table, late afternoon. You lift the new bottle to the window, and the oil doesn’t stand there clear as expected but slightly hazy — and right at the bottom a fine sediment has gathered. First thought: is this a fault?
The oil from the supermarket shelf is usually brilliantly clear, see-through to the bottom. Ours deliberately isn’t. This piece explains three things: what the cloudiness actually is, why we don’t filter — and how to tell a harmless sediment from a real fault such as rancidity.
Why is olive oil cloudy?
Naturally cloudy means this: the finest particles from the olive’s flesh float in the oil, along with a tiny share of water from the fruit. That is neither dirt nor a sign of spoilage — simply what remains of the whole olive in the juice when you don’t clarify it.
Two things that are often confused. Natural cloudiness is the haze in the oil itself — fine suspended matter that makes it slightly matt and opaque. Sediment, or a deposit, is something else: over weeks these particles slowly sink and gather as a fine layer at the bottom of the bottle. One is in suspension, the other has settled — both belong to an unfiltered oil.
And the most important distinction: cloudy is not a defect. Rancid, fusty, musty — those are defects, and you smell and taste them whether the oil is clear or hazy. Unfiltered or filtered?
Filtering is the rule in the trade, and the reasons make sense. A clear oil looks flawless on the shelf, it stands for months without anything settling, and there are no complaints from customers who take the sediment for a fault. For a product that has to keep and look the same everywhere, clarity is the safe choice.
Only it comes at a price. Along with the suspended matter, some of what makes the oil taste is drawn out too — aroma that clings to exactly those fruit particles. A filtered oil is calmer, smoother, often a little quieter.
It comes down to one sentence: clarity is a decision for the eye, cloudiness one for the taste. That is no verdict against the clear style — many excellent oils are gently filtered and remain great. It is simply a different priority.
Why we don’t filter
With us, about four hours lie between the harvest and the black glass. We press cold, bottle unfiltered, and the oil spends not a day in storage before it finds the bottle. An oil that is freshly pressed and drunk promptly needs no filtering to look good artificially for long — it isn’t meant to stand for long at all.
Seen that way, the cloudiness is honest: it shows that we don’t filter. What carries the missing blend and the freshness is the harvest year on the bottle and the values in the oil — not the looks. Cloudy on purpose.
These values stand on their own, not for the cloudiness. The Nobile brings 344 mg/kg of polyphenols, at an acidity of 0.21% — well below the legal extra-virgin limit of 0.8%. Note this: filtering would remove the suspended matter and the residual water, not the dissolved polyphenols — cloudiness and these figures are two separate things.
The honest objection: does unfiltered oil keep?
A fair objection you’ll hear: suspended matter and residual moisture can shorten shelf life. In warm storage and in clear glass that is a real point — the fine particles and the bit of water can age an unfiltered oil faster than one clarified bright.
With us it doesn’t bite, for several reasons: fast, cold pressing, black glass against the light, a young vintage, a small, numbered quantity — and an oil that is drunk promptly. It is meant to reach the table fresh, not to outlast three years on the shelf.

How to handle cloudiness and sediment
In practice it’s simple. Swirl the bottle gently before pouring, and the sediment spreads so the oil turns evenly hazy. Or leave it to rest and pour off the top — both are right. The sediment is nothing to worry about; it is a property, not a flaw. For keeping it, the same rules apply as above — no special case, just not the fridge, where the oil only turns to flakes.
The test is always smell and taste, never the looks. If it smells old, fatty, fusty — that’s a defect. If it’s cloudy but bitter and fruity, with a scratch in the throat, those are signs of life, not faults.
