Dolce di Rossano
A rare Calabrian olive variety — the voice of our hill above Rossano.
Dolce di Rossano is a rare olive variety (cultivar) from the area around Rossano in Calabria, southern Italy. “Dolce” — sweet — points to its mild, balanced profile: less aggressively bitter than many northern Italian varieties, with green fruitiness and a quiet pungency on the finish.
It is the foundation of both Terra di Gaia oils. Our oil comes from a single hill above Rossano — single-variety, picked by hand and cold-pressed within hours. Nothing is bought in or blended.
